Serves six to eight.
3 tablespoons vegetable oil
1/2 cup onion, chopped
3 cups potatoes, diced
2-1/2 cups Steinfeld's sauerkraut, chopped
1 cup asparagus, cut into 1" pieces
6 large eggs
1/2 cup grated Parmesan cheese
1/2 cup chopped basil or parsley
1/2 cup chopped cooked kielbasa sausage
1 cup shredded mozzarella cheese
Preheat oven to 375 degrees.
In a large skillet, saute onions in oil until transparent. Add potatoes.
